Turkey internal temperature guide
USDA 165°F targets for breast and thigh, where to probe a whole bird, rest timing, and why pop-up timers are not enough.
Holiday tip — Thanksgiving turkey
Planning the November bird? This page covers evergreen safe temps and probe spots. For the holiday timeline—thaw planning, stuffing 165°F, pop-up timer myths, and rest before carving—read Thanksgiving turkey temperature.
Safe turkey temperature
For whole turkey and turkey parts, a common food-safety target is 165°F (74°C) in the thickest part. Check both the breast and the innermost thigh (without touching bone). If one area lags, keep cooking and recheck.
Turkey breast alone still needs a verified center temp—don’t rely on skin color or oven time charts alone.
Check breast and innermost thigh—one number is not enough on a whole bird.
Where to probe
Breast: center of the thickest breast meat. Thigh: innermost thigh meat near the joint, tip not on bone. Stuffing (if used): center of the stuffing should also reach a safe temp—many cooks roast stuffing separately for more even results.
Open the probe fully, insert, wait for a stable reading, then check the other zone before you carve.
Rest before carving
Rest the bird so juices redistribute. Temperature can rise slightly during rest. Use your digital instant-read for a final check before carving so the platter isn’t full of underdone dark meat.
If the breast is done early, some cooks shield it with foil while the thighs finish—verify both with the probe.
Why instant-read helps on holidays
Oven dials and pop-up timers are rough. A quick-read thermometer lets you verify breast and thigh without guessing—especially useful for large birds and crowded holiday ovens.
Keep the unit on a magnet nearby, wipe between checks, and see our chicken guide for smaller poultry pieces cooked the same week.
Leftovers and reheating
Leftover turkey should be reheated thoroughly. Use the thermometer in the thickest leftover portion when reheating large containers. Food-safety leftover windows vary by guidance—when in doubt, reheat well and refrigerate promptly after the meal.
